Excellent 3-step sharpening, but knife control a bit tricky, December 28, 2008 By Techdaddy (California USA) - See all my reviews Amazon Verified Purchase This review is from: Chef's Choice Professional Heavy Duty Electric Diamond Hone Sharpener THE GOOD: For only a little extra money, this knife sharpener adds a "pre-sharpen" stage that quickly puts a straight, coarse edge on large or small knives. Works very well, and minimizes wear on diamond pads used for later fine edge-sharpening. IMHO, the knife after just pre-sharpening is actually perfect for cutting fruits, vegetables, other foods that cut better with slightly serrated blades. Using all three sharpening stages with this rig produces a top-quality knife edge which lasts as long as the metal will allow and cuts beautifully through meats or other food.
THE BAD: Noisy, and vibrates a bit during normal use. The four little rubber feet do stabilize the machine (on clean dry surfaces) but might not last "forever" in kitchens where a portable electric sharpener gets thrashed excessively. Removable plastic cover for first-stage pre-sharpen slot is a bit flimsy and can easily get lost (a hinged or SLIDING cover would be better). Reminder: the diamond pads in modern... Read more
