A brute of a cleaver for breaking down ribs and joints, October 16, 2011 By Opti Mystic "Poco Loco" (San Jose, California) - See all my reviews This review is from: Dexter-Russell 8" Cleaver This cleaver is heavy, about 2.75 pounds. It's about 3/8 inch thick on the spine, tapering to 3/16 near the edge. Once you get it moving, it will chop through ribs and joints very well. You need a sturdy butcher block for this one. I don't use it much, but every time I do I get free aerobic exercise.
The big 4 x 8 blade made of high carbon steel and holds an edge very well. I don't think it's stainless because mine has surface rust patina, which I don't mind, but I would not call it stainless. High carbon steel holds an edge better anyway. I'd recommend you never put it in a dishwasher or you will rust the blade and split the handle. The rosewood handle and brass rivets are beautiful and very strong, which they need to be for this bad boy.
Dexter Russell sells a lot of cutlery to butchers, restaurants and food service places, so their products are sturdy but not stylish, designed for professionals yet priced well.

It cuts thru bones easily and doesn't lose it's sharp edge. Amatures should be careful using it. You will need a cutting board that can take the pounding if you use it frequently like I do.
