This is one of the best kitchen knives I have used to date. The craftsmanship is superb, the knife is very light and well balanced, a perfect combination if you work in a professional kitchen all day. The edge of the blade is razor sharp and seems to hold an edge very well, and when it dose loose its edge it is brought back very easily. The only negative is that the blade is very fragile which is to be expected with a knife like this so you have to be very cautious not to drop it or hit the tip on anything as it will break very easily. Korin's customer service is awesome, I actually mistakenly ordered the wrong Saya for this knife but after a quick phone call to Korin they sent me the correct one right away.
